Tostones with Mashed Avocado and Red Snapper Ceviche

Ingredients
- 2 Green Plantains.
- Vegetable oil (for frying)
- 1-2 avocados.

- 1 Lb Red Snapper (or other white fleshed fish)
- 1 red onion.
- Cilantro.
- 6 limes.
- 1/2 cup fish stock.
- 2 garlic cloves.
- 1 jalapeño.
- 1 teaspoon ground cumin.
- Salt and pepper to taste.
